Cooking During the Pandemic: My Faves and Favorites

Exploring My Culinary Comforts during the Pandemic

During this challenging time, my kitchen has become my sanctuary, a place where I can find comfort and joy through the act of cooking. Here, I share my go-to dishes and the delightful experimentation I've embraced since the pandemic began.

My Favorite Recipes and Techniques

For special occasions, there’s nothing quite like indulging in a Cheese Kimchi Udon baked in a hotpot. The savory and spicy flavors are a guilty pleasure, especially when accompanied by the energy inefficiency of a preheated pot. It’s a treat that warms both body and soul.

When the weather turns raw or I’m cooking for just myself, I opt for a fiery Vindaloo paired with my homemade chipatis. The smoky heat, combined with the soft yet crispy chips, provides a delightful balance of flavors. This is a meal that’s both comforting and invigorating.

On the quest for efficiency, I chose Chicken Bok Choi Mushroom Udon Soup. This broth-based dish, often enriched with dumplings, is perfect for ensuring that my homemade meals make the most of my kitchen resources.

Flexibility with Bulk Cooking

One of my favorite practices has been cooking in bulk and freezing meals for future consumption. This method allows for easy dinners throughout the week and reduces the need for repeated cooking. I aim to prepare enough ingredients for at least four meals at once, making the entire process more efficient and enjoyable.

Adaptation and Innovation with No Oven

In a twist of fate, our apartment building experienced a gas leak, leaving us without oven use for over a year. Fortunately, I had an Instant Pot, which presented a new avenue for culinary exploration.

One of the most satisfying creations was an international lasagna made with soft corn tortillas. Layers of sautéd vegetables, homemade Cuban black beans, and Manchego cheese were topped with crumbled Cotija cheese. This dish was a testament to creativity and the adaptability of kitchen tools in times of limitation. Naturally, following the savory main course, I couldn't resist making an Instant Pot banana cheesecake with a vanilla wafer crust, a perfect end to an elaborate feast.

Inspiration from Others

During the lockdown, I was inspired by the creations of my sister, who learned to bake bread. Together, we experimented with various recipes, from baguettes to Chevrot au vin and other delightful baked goods. These moments of shared culinary creativity brought us closer together and provided much-needed sustenance both physically and emotionally.

Conclusion: The Joy of Cooking

Whether it's a comforting hotpot, a fiery spice blend, or a hearty soup, the joy of cooking has been my anchor during these unprecedented times. Each dish I prepare not only nourishes my body but also stokes my soul, reminding me of the simple pleasures in life.
